In the field of the anthropology of nutrition, Annie Hubert worked, for example, on the history of the definition ofMediterranean diet and nutrition and its construction as a scientific concept, and contributed to a reflection on the emergence of regional gastronomies in the global era, and on nutrition in port cities. In addition, she established, though her work, a common ground between nutrition, health, science and social imaginary.
With respect to the anthropology of health, Annie investigated such topics as the socioculturalk factors that may encourage women to participate in campaigns for the detection of breast cancer, and perceptions of menopause among women. Furthermore, she studied the impact of migration on liability to nasopharyngeal cancer.
Turning to the field of knowledge now known as the anthropology of body, Annie analyzed processes involved in the control of the body´s system and denounced the “religion” of diets, the diktat of thin bodies, and new models of the body that lead to eating disorders. Her work posed the following question: does a universal form of form of the human body exist that is not contaminated by cultural influences? In summary, we would reiterate our emphasis on the diversity, originality and richness of Annie Hubert´s trajectory, always accompanied by her abounding vivacity, while underscoring the fact that, for Annie, anthropology cannot be a discipline that seeks to pigeonhole men and women, as she herself put it. The authors brought together in this book pay homage to Annie Hubert precisely for that ogiginality, and for her unbridled passion and enthusiasm; but above all, for her human qualities, especially her interest in, and love for, the other.
